At first it sounds wild to make lasagna in the instant pot. How would you get it out? But bear with me, it’s really easy, fast, and totally delicious.
I’m making this tonight and the kids and I just love it. You don’t even have to boil noodles. That’s my least favorite part – I always burn my hands when I try to separate them after taking them out of the boiling water. Maybe I’m just a klutz, but the instant pot way is SO much easier.
I follow this great recipe from Amy + Jacky (I make my own ragù though), but the real secret is the gear I use.
First you need a pan that fits in the instant pot. I have the 6 quart version, so I got this 7″ cheesecake pan which fits perfectly. It’s 3″ high so you can add several layers to your lasagna no problem.
The next problem to solve is this: how do you get this pan full of lasagna out of a hot instant pot? Easy. You can either make a sling out of tinfoil, or you can get this cool OXO silicone sling.
With these two pieces of gear, you can slide the cooked lasagna out of the pan without burning your fingers or spilling food everywhere.
As for the lasagna recipe, I worried about using what are called ‘oven ready noodles.’ These are lasagna noodles that don’t need to be boiled first – you just put them in the lasagna dry. I wondered if they’d be gummy or get overcooked, but I was concerned for nothing. They tasted just like regular lasagna noodles! I used Barilla brand, but there are lots available.
So there you go – lasagna in the instant pot! It’s not just easy and fast, it’s delicious too.
